does anyone have a tried n true recipe for brown stew chicken?

one whole chicken cut up in pieces, wash in lime water or vinegar
brine in salt water for 1 hour minimum (optional and not Jamaican)

Season with
chopped onion, skellion, garlic
ketchup, soy sauce
all purpose seasoning salt
all spice or pimento (whole) if powdered just use a tups.
scotch bonnet to taste
brownining (kitchen bouquet) also optional

let that marinate few hours or overnight.

if you dont use browning (optional as is this step)

burn some sugar in oil in a deep pot or dutch oven. (or just heat a bit of oil)

brown chicken pieces on all sides (try to shake of the pieces of seasoning prior)

Add the marinade and some cut up potatoes and water.

cover and let simmer on low-medium until the chicken is cooked or almost cooked.

add spinners if yu like them (dumplings)

Thicken gravy with cornstarch or bread crumbs as you like.

sorry I don't measure and cook unless it is baking. hope this helps. ask if you need clarity as this is just typed off the top of my head.

the burn sugar is a "small island" method I learned from a couple of different guys one from Grenada and one from some other Island. but the end result is the same or similar yummy yummy good good.
