We stayed in Villa Adi Oso across from the airport one time. It was nice with an upstairs and down with the kidos upstairs.
There are several beach options and if you have a cart it will be easy to get to Playa Norte or Playa Sol.
Tarzan's is a nice location where you can rent 2 chairs, umbrella, table cheaply for the day and you can bring your own cooler. There are others where chairs are free but you have to buy your drinks from them.
At least for one meal I would suggest Minino's on the beach kinda across from the Posado hotel and slightly towards the ferry. Also near the ferry Ballyhos has good fish and chips. So many wonderful palaces to eat it is hard to mention them all. But where you are staying a golf cart is very necessary or you would have to rely on taxi or bus. Taxi union stopped the collectivos (on Isla) I believe.
If you go down to Punta Sur way Playalonchero and El Publetio are good places to eat. Also down that way if you like to snorkel Hotel Garrafon (not to be confused with the Garrafon park) will let you in for a small amount for the day and you can take a cooler there or buy drinks there if you don't want to take a cooler. They have a bunch of iguanas that hang around. Let me know if you need anything esle and again the map chick map is the bomb.
